Oolong tea has a distinct taste that falls between that of un-fermented green tea and the fully fermented black tea. Produced from the tea plant, Camellia Sinensis it undergoes almost the entire process of production as the black tea, including picking, withering, rolling, fermenting, and final drying. However, it is oxidised for a shorter duration than black tea, which gives it a reasonably high antioxidant concentration, and yet not give it the leafy and grassy feel of green tea.
Brewing a perfectly flavorful cup of oolong tea is a skillful process but certainly not too hard that you can’t learn how to do it. Oolong tea is prepared in a special style, called the “Gong Fu Cha” style. Literally, it means ““brew tea with discipline and graceful skill”. This method originated in the Fujian province of China and is hence also known as the Fujian tea ceremony. The steps of this ceremony draw out the best flavor of oolong tea. Traditional yixing teapots are ideally suited to brew oolong tea. The porous clay used to makes these pots absorbs the flavor and aroma of the tea and delivers a wonderfully enhanced flavor after repeated use. You can also heat the yixing teapot before use. Heating makes the pot retain heat for longer and stabilize the temperature of the pot when you start steeping.
